This coffee was produced in this beautiful region by producers and members of CAFICO, a farmer cooperative situated in the town of Corquin. It is also in close proximity to Celaque National Park, home to Cerro Las Minas, the highest mountain in Honduras with some 2,870 masl. The cooperative has more than 400 farmer members who produce, process, and export their coffee organically as a collective since 2011. Nowadays, they own more than 1,100 hectares of farmland. In addition to implementing various socio-environmental projects, including a “Model Farm” and a coffee school to teach good production practices to the farmers, CAFICO supports its surrounding community by providing assistance to local healthcare centers and water filters, eco-stoves, and toilets to the farms. Coffees in the Corquin are harvested from November to April, processed in wet mills, and often sun-dried.
This organic selection is washed, with a cup driven by flavors of chocolate, stone fruit, and hazelnut, and complemented with citric acidity and a round, full mouthfeel.
