The Faroe islands in the North Atlantic has a stellar reputation for salmon farming, which is not always done right. And within this cluster, the farm we deal with, Hiddenfjord, is top in class. Family owned, no antibiotics, no hormones and doing things the hard way which is the best way. They care and you can taste the difference. 2lb of portioned salmon blast frozen and vac packed. The pieces are frozen separately so you can remove one or two at a time, wrap the rest up in plastic wrap after you break the seal and place back in your freezer. Oh, and sushi grade so get your poke on!
