A medium grain rice with a high gluten content making it perfect for both sweet and savory dishes. Also known as Chinese Forbidden Black Rice it has a sweet flavor and wonderful sticky texture. Mound cook black Chinese rice in a bowl with chopped garlic and ginger cooked first in oil, steamed & sauteed baby bok choy, slivered scallions and bits of scrambled egg, tofu chunks or sauteed chicken bits. You will have a nutritious, delicious, adventurous meal in a bowl.
First, rinse the rice. Next, add it to a lidded saucepan. Stir in 1 3/4 cups of water for every cup rice, along with 1 teaspoon olive oil. Bring to a boil, reduce the heat to low, cover, and simmer for 30 minutes. Remove it from the heat and let it sit, covered, for 10 more minutes.
